New England Clam Chowder

My mum made this for us while we were celebrating…what I wasn’t sure but I never forgot that clam chowder! I’ve been trying to recreate my mothers recipe and this is the closest I’ve gotten. I think many restaurant chowders are too thin, skimp on the clams or the chowder is dominated by potatoes. They clearly ignores the star of the show…..CLAMS!

Griot (Haitian Fried Pork)

Most notably one of the most common and everyone favorite Haitian dishes it’s pronounced griot (gree-yoh). It is typically fried but can also be baked or broiled depending on your liking.

This dish has very basic steps so its all about the technique of brining and marinating. It sits in the brine for 2-4 hours to keep the meat tender, then the dish is typically marinated overnight, so plan ahead, this is not a quick meal. The meat is simmered in the marinade until tender then deep fried until it forms a nice golden crust.

Pickled Onions

This is one of my go to toppings! I add the onions salads, tacos, burgers and any fried goodies like this Griot. I also use the sauce to make vinaigrette and marinade chicken. I even blend it into a creamy Cilantro Crema,  perfect dipping sauce for empenadas. Since it marinades in the onions this recipe quickly brings in a depth of flavor that naturally elevates the taste of your food adding in both sweet, salty, acidic and spicy flavors.

Quick & Easy Homemade Pho

It’s unbelievable but Florida has been hit with a cold front that has stayed for more than one day. We’ve been in the 40’s for a while and I am loving it!! But I’ve been craving that spicy and hot umami flavor that is found in Vietnamese inspired Pho! I had a wonderful local restaurant within 10 minutes of where I use to live. Now, its too far of a drive. So I decided to make this myself at home!

Pho normally takes a few days to develop those deep rich flavors-but I’m not that patient-so I used a few shortcuts to develop deep flavors in a small amount of time!

Banana Bread

Learn how to make this versatile dessert recipe with less than 15 minutes of prep time!

One of my go to quick dessert recipes to make is a moist banana bread. I am very big on preventing food waste so anytime I see a banana going ripe, I’ll pop it in the freezer. This recipe only calls for three bananas so when I have enough I’ll whip this up in 15 minutes.

This is one of my husbands favorite desserts so I make it quite often. Feel free to add any ingredients, this recipe is very flexible and forgiving (so if you mix up the steps…shhh..no one will know). I’ve added in sliced persimmons (when they were in season), sliced almonds and semi sweet chocolate chips. I will try adding in some crushed pineapples next time. Since this recipe is very forgiving it’s great for new bakers, so I highly recommend you start with a recipe like this.banana bread
